HOW TO PREPARE DRY PASSATELLI WITH SPECK AND WALNUTS
Ingredients for 4 people:
- 2 packs of Rossi Fresh Passatelli
- 100 g of cream cheese
- 50 ml of whole milk
- 120 g of walnut halves
- 150 g of speck
- Extra virgin olive oil
- Parmigiano Reggiano PDO (Protected Designation of Origin)
- Salt and pepper to taste.
Preparation
- Put the pot on the heat to cook the passatelli.
- Take the beaker of an immersion blender and blend the cheese, milk, and walnuts together until you get a creamy mixture.
- Cut the speck into thin strips.
- In a pan, gently heat the oil and brown the speck, then set it aside.
- Cook the passatelli, then toss them in a pan for a few moments with the walnut cream, and finally plate them, topping with the crispy speck.
