Dry Passatelli with Speck and Walnuts

HOW TO PREPARE DRY PASSATELLI WITH SPECK AND WALNUTS

Ingredients for 4 people:

  • 2 packs of Rossi Fresh Passatelli
  • 100 g of cream cheese
  • 50 ml of whole milk
  • 120 g of walnut halves
  • 150 g of speck
  • Extra virgin olive oil
  • Parmigiano Reggiano PDO (Protected Designation of Origin)
  • Salt and pepper to taste.

Preparation

  1. Put the pot on the heat to cook the passatelli.
  2. Take the beaker of an immersion blender and blend the cheese, milk, and walnuts together until you get a creamy mixture.
  3. Cut the speck into thin strips.
  4. In a pan, gently heat the oil and brown the speck, then set it aside.
  5. Cook the passatelli, then toss them in a pan for a few moments with the walnut cream, and finally plate them, topping with the crispy speck.
