HOW TO MAKE TORTELLINI WITH CREAM
Ingredients for 4 people:
- 2 packages of Modena tortellini
- Meat broth
- 100 ml of fresh cream
- 2–3 tablespoons of grated Parmigiano Reggiano
Preparation
- Bring the broth to a boil.
- Meanwhile, using a whisk, prepare a light Parmesan cream with the grated cheese and 2 tablespoons of hot broth.
- Mix the cream you just made with the fresh cream.
- Cook the tortellini for 2 minutes. Gently drain them with a slotted spoon and transfer them to a stainless steel bowl. Gently toss with the cream and Parmesan mixture.
