Tortellini in a Parmesan cream sauce

Tortellini are one of Modena’s most beloved dishes: with their filling of Parmesan, mortadella and prosciutto crudo, they tantalize the palate and are a real treat for the taste buds. One way to further emphasize the “Modenese” character and flavor of this fresh pasta is to dress it with a good Parmigiano Reggiano cream, another typical product from our area that’s always ready to yield exquisite recipes.

The method is very simple, but the result is spectacular. Shall we get cooking?

HOW TO PREPARE TORTELLINI IN PARMESAN CREAM

Ingredients for 4 people:

  • 2 packs of Modena tortellini Pasta fresca Rossi
  • 250g grated Parmigiano Reggiano DOP
  • 200g fresh cooking cream (or 250ml milk)

Preparation

  1. Heat the cream (or milk) and remove it from the heat before it comes to a boil.
  2. Add the grated parmesan and blend everything with a mixer.
  3. Put the tortellini back on the heat for a few minutes while you cook them
  4. Drain the tortellini, place them on the plate, drizzle with the cream of parmesan, add a few fine flakes of Parmigiano Reggiano and a pinch of pepper.
