Modena Tortellini with ham, peas, and cream

HOW TO PREPARE TORTELLINI WITH HAM, PEAS, AND CREAM

Ingredients for 4 people

  • 500 g of Modena Tortellini Pasta Fresca Rossi
  • 1 onion
  • 200 ml of cooking cream
  • 100 g of diced cooked ham
  • 150 g of fresh peas
  • Olive oil, salt, pepper, and Parmigiano Reggiano to taste

Preparation

  1. Start by heating a pot full of salted water. Shell the peas and blanch them for 5 minutes.
  2. Meanwhile, finely chop the onion and sauté it in a pan with a drizzle of olive oil. Then add the previously blanched peas and finally the diced cooked ham.
  3. Cook for a few minutes, turn off the heat, and pour in the cooking cream. Mix and season with salt and pepper.
  4. Now, cook the Modena Tortellini for 1 minute in the water where you blanched the peas, drain them, and add them to the sauce, mixing well to combine everything.
  5. Serve the tortellini with a generous sprinkle of Parmigiano Reggiano for an even richer flavor!
