HOW TO MAKE TORTELLINI WITH RAGÙ
Ingredients for 4 people
- 500 g of Modena Tortellini Pasta Fresca Rossi
- 500 g of local sausage
- 400 g of tomato purée
- 1 golden onion
- 1 carrot
- 1 celery stalk
- half a glass of red wine
- 250 g of water
- Extra virgin olive oil, salt, and pepper to taste
- Parmigiano Reggiano
Preparation
- Since Modena Tortellini Pasta Fresca Rossi cooks in just one minute, let's start with the ragù.
- Begin by finely chopping the carrot, onion, and celery, then cook them in a pot with extra virgin olive oil.
- Once the soffritto is ready, take the sausages, remove the casing, and cut into pieces, then brown them with the soffritto.
- Now deglaze with half a glass of red wine, stir, and add the tomato purée and water.
- Season with salt and pepper, stir again, and cook with a lid until the desired consistency is reached (approximately one hour).
- When the ragù is ready, fill a pot with water, bring to a boil, and add salt. Cook the Modena Tortellini for one minute, then drain and mix thoroughly with the ragù.
- Now all that's left is to plate and serve with a generous sprinkle of Parmigiano Reggiano.
