HOW TO MAKE TORTELLINI WITH PESTO
Ingredients for 4 people:
- 1 package of fresh ham tortellini – Pasta Fresca Rossi
- 90 g of pine nuts
- 1 glass of fresh basil leaves
- 1 clove of garlic
- 2 tablespoons of grated Parmigiano Reggiano
- Extra virgin olive oil, to taste
- Salt and pepper, to taste
Preparation
- Take a large pot, fill it with water, and bring it to a boil.
- Meanwhile, prepare the Genoese pesto.
- Take a marble mortar and gently work the pine nuts and garlic, then add the cheese and basil.
- Once you have a smooth paste, finish by pouring in the oil gradually until you get a creamy pesto.
- Salt the water, bring it back to a boil, then add the tortellini.
- Drain the tortellini al dente and toss them cold with the Genoese pesto.
