Tortellini with pesto

Do you think tortellini are a first course only for the cold season? It depends on the sauce! Today we suggest a recipe perfect for spring and summer as well, unusual and very tasty: tortellini with pesto!

HOW TO MAKE TORTELLINI WITH PESTO

Ingredients for 4 people:

  • 1 package of fresh ham tortellini – Pasta Fresca Rossi
  • 90 g of pine nuts
  • 1 glass of fresh basil leaves
  • 1 clove of garlic
  • 2 tablespoons of grated Parmigiano Reggiano
  • Extra virgin olive oil, to taste
  • Salt and pepper, to taste

Preparation

  1. Take a large pot, fill it with water, and bring it to a boil.
  2. Meanwhile, prepare the Genoese pesto.
  3. Take a marble mortar and gently work the pine nuts and garlic, then add the cheese and basil.
  4. Once you have a smooth paste, finish by pouring in the oil gradually until you get a creamy pesto.
  5. Salt the water, bring it back to a boil, then add the tortellini.
  6. Drain the tortellini al dente and toss them cold with the Genoese pesto.
