HOW TO MAKE ORGANIC HAM TORTELLINI WITH VEGETABLES

Ingredients for 4 people

  • 2 packages of organic ham tortellini
  • 4 zucchinis
  • 4 tomatoes
  • 1 bunch of asparagus
  • 50 g of peas
  • Fresh chives

Preparation

  1. First, prepare the zucchinis. Wash them well under water, cut them in half, then into slices. Cook them in a pan with a drizzle of extra virgin olive oil, salt, and pepper.
  2. While the zucchinis are cooking, prepare the asparagus. Wash them, remove the toughest part using a vegetable peeler, and boil them in salted water for about ten minutes. Once ready, separate the tips and cut the stalks into slices.
  3. Now let’s move on to the peas. Boil them for 5 minutes in boiling water, drain, and set aside.
  4. Last vegetable: take the tomatoes, wash them, and cut them into small cubes. These will not be cooked but used raw.
  5. Finally, cook the organic ham tortellini according to the instructions on the package, drain them, and add them to the vegetables. Mix well and finish with a handful of fresh chives.
