Here, the Emilian tradition comes to life through historic recipes and carefully selected, top-quality ingredients, such as Parmigiano Reggiano and IGP Bolognese Mortadella. Each product is crafted to preserve the authenticity of the taste, maintaining the perfect balance between dough and filling, just as tradition dictates.

Passing down today what our grandparents created requires passion, care, and respect for the raw ingredients. That’s why we use only carefully selected ingredients, often sourced locally: high-quality flours and fresh eggs that truly make a difference. The processing is kept to a minimum to preserve all the natural qualities of the pasta, without altering its flavor or texture.

In our artisanal pasta factory, we exclusively use bronze-drawn extrusion, a technique that gives the dough an ideal porosity to perfectly hold any sauce. For filled pastas, we faithfully follow traditional recipes, seeking the right balance between dough and filling. Only in this way is pasta created that can convey, with every bite, the true taste of tradition.
