HOW TO PREPARE TORTELLINI WITH PEAS AND CRISPY CURED HAM
Ingredients for 4 people
- 500 g of Modena Tortellini Pasta Fresca Rossi
- 200 g of peas
- 60 g of butter
- 40 g of Parma cured ham, sliced
- 40 g of Parmigiano Reggiano
Preparation
- Start with fresh peas. Remove them from the pods, blanch for 2 minutes in plenty of water, and cool in a bowl with ice to maintain their vibrant color.
- Meanwhile, take the slices of Parma cured ham and bake them in a static oven at 160°C until crispy.
- Heat a pot full of water and, once boiling, add coarse salt. Cook the Modena Tortellini for 1 minute and then drain.
- Toss them with Parmigiano Reggiano and serve together with the peas and crispy pieces of Parma cured ham. Enjoy your meal!
