Tortellini with Boscaiola sauce

HOW TO MAKE TORTELLINI WITH BOSCAIOLA SAUCE

Ingredients for 4 people:

  • 2 packages of Modena tortellini – Pasta Fresca Rossi
  • 300 g of cleaned champignon mushrooms
  • 200 g of shelled fine peas
  • 100 g of cooked ham
  • 250 ml of fresh cream
  • Salt and pepper, to taste, and grated Parmesan

Preparation

  1. Bring a large pot of salted water to a boil.
  2. Cut the cooked ham into cubes, slice the mushrooms thinly, and pour everything into a heavy-bottomed pan.
  3. Sauté for a few minutes, adding a bit of the cooking water if the mixture seems to stick to the pan.
  4. After about ten minutes, add the cream, season with salt and pepper, and let it cook for another 4 minutes.
  5. When the tortellini are cooked, drain them and toss them in the pan with the mushroom sauce.
  6. Finish the tortellini with Boscaiola sauce with a handful of grated Parmesan and serve them hot!
