HOW TO MAKE TORTELLINI WITH BOSCAIOLA SAUCE
Ingredients for 4 people:
- 2 packages of Modena tortellini – Pasta Fresca Rossi
- 300 g of cleaned champignon mushrooms
- 200 g of shelled fine peas
- 100 g of cooked ham
- 250 ml of fresh cream
- Salt and pepper, to taste, and grated Parmesan
Preparation
- Bring a large pot of salted water to a boil.
- Cut the cooked ham into cubes, slice the mushrooms thinly, and pour everything into a heavy-bottomed pan.
- Sauté for a few minutes, adding a bit of the cooking water if the mixture seems to stick to the pan.
- After about ten minutes, add the cream, season with salt and pepper, and let it cook for another 4 minutes.
- When the tortellini are cooked, drain them and toss them in the pan with the mushroom sauce.
- Finish the tortellini with Boscaiola sauce with a handful of grated Parmesan and serve them hot!
